Skillet Apple Pie (Vegan)



Dieses Rezept ist super einfach, lecker und perfekt als ein Dessert. Apple Pie schmeckt immer besser am 2ten Tag. Mein Tipp: am 2ten Tag im Offen aufwärmen und servieren.


Ich war faul diese Mal und habe das Rezept auf Englisch geschrieben. Sorry!


Ingredients:


Crust:

310g (+/-) flour (I like spelt)

1 tsp. salt

90 g cold coconut oil, hard enough to chop up

150 g vegetable shortening, cubed

1/2 (+/- ) ice cold water


Filling:

6 large crispy apples

lots of cinnamon

pinch of cardamom

1cup sugar

1/2 cup cold coconut oil


Servierungsvorschlag: Warm mit einem Kugel veganem Vanillaeis!!



1. Prepare the crust:

Measure flour out and place in bowl. Add salt, the chopped up fats and start to break up the fats into the flour. I use my fingers, but you can use forks or a potato masher too.


Once there is a grainy texture, start to add ice water drop by drop. The water MUST be freezing cold!!!!


Start to work the dough with the hands. You will have to work it at least 10 minutes. Once the dough creates a uniform ball that does not stick to the bowl. From here, cut the dough in two, flour a surface and roll each ball out to a small circle. Wrap in plastic and refrigerate at least 3 hours!!!


2. Prepare apples on baking day!


Peel, core, and thickly slice the apples and put them in a big bowl. Add sugar, spice and a spoon or two of cornstarch. Mix everything up well.


3. Prepare the pie!


Take the crusts out of the fridge. Preheat oven at 180C.


Heat a skillet up and add butter, coating all sides of the inside of the pan. Let the pan cool a bit.


Roll the crusts out so that they will cover the entire inside of the skillet. Place the first one down in the cooled skillet. Add the apple mixture. Chop up the cold coconut oil in tiny cubes and sprinkle on top of the apples. Add the top crust, pinch the two sides to seal the crusts together. Cut 5 holes in the top of the crust like a star in the center of the pie. Mix some oil with a bit of water and brush the top of the pie. Sprinkle sugar on top if you like.


Now you place the skillet in the oven and bake at 180 for about an hour, or until the pie is golden brown. Let it cool and cover until ready to serve.


Reheating: Place skillet (covered) at a low temperature in the oven (100C) during your meal and the pie will be ready for dessert!
